Out and About: in Los Angeles- Room Forty at Vibiana

Last week we were honored to be invited to a spectacular edible auditing luncheon with one of LA's hottest new culinary operations. The event was hosted by Room Forty, a catering company without walls... And that is exactly what they are. We were so impressed with each of 9 courses we were served. The flavors, the presentation and the service was impeccable. We look forward to finding an opportunity to work together with these culinary masterminds.
The location for this event was The Vibiana, a historic Los Angeles cathedral that has been transformed into an wedding, event, and preforming arts venue. It is so rich with history and the detailing in the architecture made it incredibly unique. Our minds were overloaded with ideas for a future wedding here. 
Bibb lettuces, pickled market vegetables, chèvre, house candied nuts, and a blonde raisin vinaigrette.
Heirloom tomatoes, house smoked burrata, balsamic caviar, with an opal basil vinaigrette.
Jidori chicken confit, brussel spouts, fingerling potato, and a white bean cassoulet.
Covina seabass, smoked soba noodle nest, dashi broth, and pho salad.
"Smokey Bobby Burns" bowmore legend whisky, carpano antica, beef jerky, benedictine.
Served with Prime braised beef short ribs, parsley root puree, baby vegetable, and braising jus.
